Tres Leches



Pertama kali aku liat ini di Instagramnya La Reia. Kok unik sih kuenya basah gitu. Jadi penasaran deh. Karna sama sekali belum pernah denger apalagi cobain kue ini.


Setelah sekian lama...lamaaaaaa banget, akhirnya kesampean bikin kue ini di suatu malem. Dengan kecepatan super! Karna gw nungguin emak pergi dulu trs gw langsung tancap gas untuk ngebut bikinnya selama estimasi waktu 2 jam harus udah beres. Kenapa sih nungguin emak pergi? Iya soalnya dia suka stres liat rumah gw berantakin kalo bikin kue. Hahahahaha.. So I did what people on masterchef did. Or cupcake wars. Everything is running of time!



Setelah melakukan riset2 kecil, akhirnya aku ambil resep dari Youtube nya Laura in the Kitchen http://www.laurainthekitchen.com/recipes/tres-leches-cake/
Karna diresepnya dia selain telurny dikocok terpisah, dia pake baking powder lagi. Dan yg terpenting measurementnya pake cup cup an! I am running of time!! Dia mention kan pake cake flour instead of all purpose flour. Tadinya gw ga ngerti apaan sih cake flour? Ternyata itu terigu protein rendah alias kunci biru. Tp gw pake segitiga biru no problem.


Nah problemnya muncul ketika gw udah selesai manggang. Jd gw pake 1 loyang bulat kecil dan 3 ramekins kecil. Setelah 30 menit lebih, gw keluarin dan tes tisik pake tusuk gigi. Hasilnya udah matang. Tapi ternyata yg gw taro diloyang ini belom mateeeenggg tengahnya masih basah!!! Padahal udah gw dinginin, udah gw masukin ovennya ke kardus. Oh my God my mom is coming home kalo ga cepet2!!! Akhirnya gw panggang lagi 30menit, takut banget bantet huhu... Tp berhubung ini kue abis mateng di sirem susu sampe tenggelem, jadi NO seret, NO bantet! Everything gonna be alright, even kalo kuenya gagal pun masih bisa ketolong!

Sooooooo....
Tres leches ini adalah kue khas asal meksiko, dimana bahannya sangat sederhana sekali. Butter cake yg disiram 3 jenis susu, susu kental, susu evaporasi, sama susu cair. Dan ga kira kira loh. Semuanya sekaleng2!! Waktu pertama kali nyicipin campuran susu ini parah manis bangeeeeettttt!!! Yaiyalah susu kentalnya aja sekaleng. Tapi ternyata abis diserap sama si kue dn ditaro dikulkas semaleman, manisnya jadi pas! Beneran! Jd jangan takut kemanisan. Tapi.... Kalo llain kali bikin ini aku mau kurangin susu kentalnya setengah kaleng aja hahaha

Tres Leches Cake 

Recipe by Laura Vitale


Ingredients:
1-¾ cup of Cake Flour
½ cup of Unsalted Butter at room temperature
1 tsp of Baking Powder
½ tsp of Salt
¾ cup of Granulated Sugar
5 Eggs, separated 
¾ cup of Whole Milk
1 tsp of Vanilla Extract

For the 3 Milk Mixture:
1/4 cup of Whole Milk
1 14 oz can of Sweetened Condensed Milk
1 12 oz can of Evaporated Milk

For the Frosting:
1 ½ cup of Heavy Whipping Cream
4 Tbsp of Powdered Sugar

Process, 

1) Preheat the oven to 175C. Spray a 9x13” non stick baking pan with nonstick cooking spray and lay the bottom with parchment paper, set aside. 

2) Sift together the flour, baking powder and salt and set aside. 

3) In the bowl of a standing mixer fitted with a paddle attachment, cream together the butter and ¾ cup of sugar, add the egg yolks and vanilla and mix on medium speed for about 3 minutes or until the mixture becomes thick and very pale. Meanwhile, in another bowl, whisk the egg whites until they develop stiff peaks

4) Add half of the milk along with half of the dry ingredients and mix them just enough to incorporate (don’t over mix) add in the remaining milk and dry ingredients and mix everything together. 

5) Fold the whipped egg whites into the batter making sure to do it gently so you don’t deflate the egg whites.

6) Pour the batter into your prepared pan and bake for about 25 to 30 minutes or until a toothpick inserted into the center comes out clean. (Gw 45menitan)

7) Let the cake cool for about 20 minutes and remove to a platter (make sure the platter has high edges because the milk mixture will run out the sides as you pour it on top)

8) Pierce the cake all over the top with a fork and set aside.

9) In a large measuring cup, whisk together the 1 cup of milk, sweetened condensed milk and evaporated milk, pour this mixture slowly all over the top of the cake so that it all soaks in the tender sponge. 

10) Let that sit for a about 20 to 30 minutes so that the milk mixture really soaks in and then move on to making the whipped cream topping. 

11) In the bowl of a standing mixer fitted with a whisk attachment, add the heavy cream and whisk to form soft peaks, add the powder sugar and continue to whisk until stiff peaks form. 

12) Spread the whipped cream all over the top of the cake and decorate with maraschino cherries.
